Serves 2
Ingredients
1 tin Coles Organic 4 Bean mix
55g Quinoa
2 rashers free range Bacon - fat removed and chopped into bits
3 baby Capsicums - sliced
1 large Mushroom - sliced
small knob fresh Ginger - sliced thinly
sprinkle Cumin Seeds
Chilli flakes - to taste
3 cloves Garlic
1 red Onion - sliced
handful Shallots - chopped
1 tsp Manuka Honey
3 seed mix (recipe on site)
Directions
1. Cook quinoa according to packet instructions. Drain.
2. Saute bacon in non stick pan. When half way cooked add sprinkle of cumin seeds. Cook for a few minutes stirring regularly until seeds look slightly toasted.
3. Add beans, ginger, mushrooms and chilli flakes. Cook for 5 minutes.
4. Add quinoa, onion, capsicum and garlic. Cook for 3 minutes then stir in manuka honey.
5. Dish out and top with shallots and sprinkle of 3 seed mix.
Serving Suggestions
- Salad of lettuce, cucumber, tomatoes and avocado
- Stir fry vegetable combination of zucchini, carrots and baby spinach.

Superb!!
My previous efforts with quinoa have been pretty disastrous. Sparkles has been eating it with her salads this week and it looked so yummy I was left drooling over her bowl, imagining how those fluffy little pillows of grain would taste while rolling around my mouth. I know quinoa can be a bit bland by itself which makes it perfect for absorbing the flavours of whatever it's cooked with. Last week I was craving choko, this week its quinoa and after eating my experiment I want more!! Even though I was full after eating half the mix, I could have easily eaten the whole lot.
