Serves 2
INGREDIENTS
20 g/ml Golden Soya Mayonnaise
1 red Onion
200g Purple Sweet Potato
1 Kohlrabi
Small bunch of Chives
Cracked Pepper and Rock Salt to taste
DIRECTIONS
1. Chop sweet potato and kohlrabi into cubes. Steam until tender.
2. Finely chop onion and chives.
3. Mix all ingredients together in glass storage container.
SERVING SUGGESTIONS
Serve hot, warm or cold with any of the following:
- Cold meat and salad
- Steak and salad
- Chickpea fritters (recipe on site) and salad
- Fish and salad
Unless I make my own mayonnaise, Golden Soya is pretty much the only one I like. It is legions above it's competitiors. The only serious contender is a brand whose name I can't remember!! If cooking for guests I would leave out the kohlrabi. Golden Soya Mayonnaise, usually available in the Health section of Woolworths and Coles, can make even the dullest salad come alive. Because of the calories I have learnt to adjust my taste buds and go easy on the serving size. The proof is in the taste and it's a rarity to have leftovers unless I hide them.
A very intelligent friend once pointed out that the beauty of metric is that the measures are interchangeable. Therefore, 1kg = 1,000 mls. I haven't thoroughly tested this theory but since he is rarely wrong about anything, I will assume he is correct until proven otherwise. Since proving him wrong in anything gives me a momentary feeling of intelligence, I will continute to test...although I know it applies to water.
